My Favorite Minestrone
first start with a really big pot.
1 pound ground beef — brown and drain
1 cup chopped celery + 1/4 cup chopped green onion — add to meat and cook till soft
add 1/4 cup chopped green pepper
add 4-5 cans chicken broth — bring to boil
1 large bag frozen mixed vegetables — simmer 15 minutes
1 large can kidney beans or great northern — simmer 10 minutes
1 jar spaghetti sauce — simmer 30 minutes
add 1 teaspoon Italian seasoning
pinch of salt and pepper
add cooked pasta of choice when serving (if you leave it in the soup, it soaks up all the fluid)
